The 4000-Calorie Cake

(Don’t try this one if you’re on a low-cholesterol diet.)

Ingredients:
3 cups all purpose flour sifted
3 cups sugar
2 tsp. vanilla
8 egg whites
8 egg yolks
2 cups butter
2 tsp. almond extract
1/2 cup finely chopped almonds
1/3 cup Galliano (Italian liquor) or bourbon
powdered sugar

Directions:
Butter a 11" baking pan or tube pan.

Sprinkle chopped almonds on the bottom of the pan.

1.  Beat egg whites until stiff
2.  Gradually add 1 cup sugar
3.  Beat butter and remaining 2 cups sugar in large bowl
4.  Add egg yolks one at a time
5.  Stir in vanilla and almond extract and liquor
6.  Add flour and continue to beating until smooth
7.  Fold in meringue 
8.  Pour into greased pan
9.  Bake at 350 degrees for 90 minutes or until top springs back.


Cool completely on wire rack before dusting with powdered sugar.
